Updates the macOS 26 toolset definition to move the Xcode 26.5 beta entry forward (intended to point at beta 2) so image generation installs the newer Xcode build.
Changes:
- Bump the Xcode 26.5 beta entry (x64) to
26.5_beta_2with updated filename, build version, and SHA256.

This PR adds Xcode 26.5 beta 2, xcode26.4.1 to macos-26 and macos-26 ARM
